Baking with kids can be a blast, so try out this simple, kid friendly recipe for shortbread cookies for a fun activity with yummy results! Keep things playful by trying out different cookie shapes or adding bits of raisins or chocolate to the dough for an extra treat. You can also turn decorating the cookies into a creative activity for the kids! Let them add the icing or melted chocolate on top for a twist to a traditional and well-loved recipe. What you’ll need:

  • 1 egg
  • 100g brown sugar
  • 150g unsalted butter
  • 200g flour
  • Teaspoon vanilla extract (optional)
  • Pinch of salt

What to do:

  • Separate the egg yolk into a mixing bowl
  • Cut up the butter into small cubes (so that it’s easier to mix)
  • Add all the ingredients into the mixing bowl and mix together with your hands until the cookie dough has a crumbly structure
  • Roll the cookie dough into a ball and wrap with cling film
  • Pop the dough in the fridge for at least 30 minutes

Preheat the oven to 175°C (350 °F)

  • Dust your countertop with some flour and roll out the dough to about 3-4 mm thickness
  • Use a cookie cutter or the rim of a glass to cut out the cookies from the dough
  • Line up the cookies onto a sheet of parchment paper
  • Place the tray of cookies onto the middle shelf of the oven and bake for around 15-20 minutes or until lightly browned
  • Take the cookies out of the oven and let them cool for a few minutes
  • Decorate and enjoy!
